Properties : Dihydrate type contains one or two molecules of water of hydration and is slightly hygroscopic.The hydrated forms occur as white or transparent crystals or granules. All forms are freely soluble in water, but are insoluble in alcohol. The pH of a 1:100 solution is between 4.1 and 4.7.
Application : In the food industry as a quality improver, PH regulator, Buffering agent, emulsified dispersant, nutritional supplement and moisture retainer. Mainly used in cheese, beverages, jelly, ketchup, lunch meat and meat cured products, at the same time can be used as modified starch additives. Add 3-5 ‰ to food processing.
